After World War II, food was scarce, and a regional variation of pizza emerged in Naples. On Sundays, local women vendors would operate pop-up pizzerias on the pavements, outside their homes.
They would serve this deliciously filled pizza deep-fried, instead of oven-baked, called - the pizza fritta.
